
Like most of us, I didn’t grow up eating many vegetables, and I didn’t even know half of them existed at all. After a decade farming, doing public cooking demos, and talking with people at farmers markets, I am here to help break down the intimidation of cooking with fresh vegetables and help you make super simple delicious food at home.
Part of the intimidation we feel around vegetables isn’t just about not knowing what things are, it’s about an idea that we must be perfect. That we must plate up the most artisanal thing the world has ever seen, that we must always buy organic, that if you don’t make your own salad dressing from scratch that you’re a failure.
Although we will certainly learn delicious dressing recipes, I am also here to tell you that we can all calm down, be gentle with ourselves, and just dabble with good food. If you use store-bought dressing, no worries! If you want to make a gorgeous chicory salad to go with your box pasta, have no shame! This isn’t about rules, it’s not about eating vegetarian or vegan, it’s just about learning how to love and incorporate the veggies in season around you into your life when you can. 🖤
