June cooking class at Young Roots Oregon

This month we got to join parents at Young Roots Oregon for our first cooking class of 2024! I hadn’t seen these families for almost a year and it was so nice to be back and see how big everyone’s kiddos are. I love working with Young Roots because each class has a dinner provided for parents and kids beforehand, parents are compensated for their time to take the class, and daycare is provided during the class as well. They offer all sorts of classes that help young parents with financial stability, job security, pathways to education, and cooking classes like these! We do our best to help folks get to know local produce and how to make simple tasty dishes that are actually feasible for busy young parents to work into the weekly routine.

We were joined by guest chef, Diego Nieto, a good friend and the Linn County Healthy Communities Coordinator. Highlighting the early summer produce available in our area from Eloisa Organic Farm and Ejido Oso, we had an abundant display of local fruits and veggies to use in our class and for parents to take home at the end of the day.
