Delicate crisp bok choy and tatsoi raab, deep purple kalettes and Purple Sprouting Broccoli, vibrant radishes, and more!

The first market of March brought with it signs of the seasonal transition to spring. Brassica raabs made their seasonal debut alongside deep purple and pink winter gems. Brassicas are from the broccoli family and they include bok choy, tatsoi, mustard greens, kales, cabbages, and so much more.

Every spring, the brassicas that have been overwintering outside send up their flowering stalks, which we refer to as raab, or rapini. All raab has that nutty, savory flavor and texture of broccoli, combined with the flavor unique to that plant. Raab, as well as Purple Sprouting Broccoli, known as PSB, is delicious roasted or sautéed in full stalks as you would with asparagus and dipped into a garlic herb aioli, or roughly chopped, sautéed, and served with fried eggs on top for breakfast.
