Bok Choy Tamari Stir-Fry with Rice, Radish & Carrot

This very simple dish is absolutely delicious and filling every time, bringing out the best of bok choy, especially when topped with a couple fried or soft-boiled eggs, kimchi, and a dollop of chili oil!

In a hot oiled pan, add halved or quartered baby bok choy and stir-fry with tamari (or soy sauce) and a half an onion. Add garlic in after a few minutes. Salt to taste once pan is turned off. Serve with white rice, topped with sliced radishes and grated carrot. Also! If you happen to have leftover fried rice from your pandemic take-out life, add that into the pan once the bok choy is cooked with a little more tamari and mix together.
