Good King Henry

Latin Name: Chenopodium bonus-henricus, Blitum Bonus-henricus)

Other Names: Lincolnshire Asparagus

This perennial green is somewhere right in between quintoniles and spinach. The tender young leaves are highly nutrient dense and typically eaten cooked. The tender flowering stalks can also be eaten when harvested young or forced and is considered to be somewhat asparagus-like. Really great hardy green that can thrive in pretty much any conditions, has a long harvest window throughout the season, and comes back every year. Great addition to the garden as a replacement for spinach. The seeds are also edible similar to quinoa and amaranth.
