Green garlic is just the young stalks of garlic that are bursting out of the ground each spring before they’ve started to bulb up. Green garlic is a garlic-lover’s dream come true! All the garlic flavor you could every want, without having to peel or mince any cloves. You can chop a few stalks of green garlic into just about any stir-fry or scramble, pasta, or salad, and it’ll add a mild buttery garlic richness.

Many farmers and gardeners sew their garlic cloves extra tight in the fall with the intention of thinning out the stalks as green garlic during the spring while the stalks are still tender and leaving the rest to head up and be harvested in the summer.
