Leek Scapes

Latin name: Allium porrum

Spanish: flor de puerro

Just like all other alliums, leeks send up their flowering stalks in the late spring and early summer. While most garlic scapes are thinner like a green bean size, leek scapes are thicker more like an asparagus stalk with a buttery zucchini-like texture. They’re a flavorful yet mild addition to sautées, roasts, pestos, and raw in salads.

Leek blossoms are are edible as well, taking the form of large white pompoms of papery petals that look beautiful sprinkled on top of any dish, adding a punchy garlic flavor. Leek blossoms also look beautiful in bouquets, and can be dried for dried flower arrangements.
