Cooking with Winter Veggies: Radicchio!

Most of us aren't very familiar with winter vegetables like celeriac or radicchio. Whether you've never seen a vegetable in your life or are just looking for new ways to cook with them at home, join me for a cup of tea and cooking demonstrations!

This week, we get to know radicchio, how to cook with it, and learn two super simple recipes that could be your new go-to favorites! We really do like bitter foods, we love coffee but we do mix in some sugar and cream. Both of these recipes utilize sugars and fats to balance out the bitterness to perfection.

For this class I’ll be making an Apple Hazelnut Radicchio Caesar Salad and Bacon Walnut Radicchio Pasta. You’ll get to try both, go home with beautiful recipe cards, and all the local organic veggies you'll need to make both recipes!

Location

This farm to table cooking class will be held in the cute and cozy Gathering Together Farmstand. Located on farm, the Farmstand & Restaurant is a quaint space just under a mile off Philomath Blvd.

About the Instructor

Hi there! My name is Laura Bennett. I've been farming, cooking, and educating about both for the last ten years. I didn't grow up eating many veggies, and I really love helping to break down the intimidation of cooking with fresh foods. The goal isn't to be a vegetarian, always buy organic, or even to cut packaged foods out of you life. It's just about learning how to incorporate a little more veggies into your cooking in a way that both super delicious and feasible amidst a busy life. Hope you come can come out! Cost

This cooking class costs $30 per person, including the cost of all the local veggies that you get to take home. For anyone experiencing food insecurity, I do offer 5 discounted tickets per class at $15 per person, no questions asked, first come first serve.
