Nopales are so essential in Mexico they are on the nation’s flag, and as they should be. Nopales are the key ingredient to many rich, delicious dishes and grow throughout the Americas. All “paddle” cacti (ones that have flat pads) are of the genera Opuntia. All cacti within the genera are edible, although nopal verdura is grown for the vegetative pads and nopal tunero is grown for the fruits. Nopales are juicy with a mildly sweet flavor and are commonly used in cooking throughout the Americas to make incredible salsas and savory dishes. The fruit of nopales are called tunas, or prickly pears, and they range greatly in color, flavor, and size. Nopales come in many varieties that range from super spiky to smooth.
