Quintonil (Pigweed)

Latin Name: Amaranthus retroflexus

One of many amaranth cousins that grow wild throughout the Americas, are highly nutrient dense with a rich, spinach-like flavor, and are beloved in home kitchens across the continent. The greens are typically harvested before the plant goes to seed while they are still young and tender.

Quintoniles are known for having a rounded leaf edge compared to their cousin, quelite cenizo, which has a serrated leaf edge. Quintoniles also come in a wide variety of colors from green to bright pink and everywhere in between.
