Baby bok choy comes in many colors and sizes, but always has super thick juicy stems that are so crispy fresh raw and so juicy when stir-fried or served in soups. The super short squat little baby bok choy, or Shanghai Bok Choy, is known for being sautéed in halves and laid on top of white rice or being added into rich broths and bowls of ramen. While baby bok choy comes in both green and white varieties, larger bok choy, or Joi Choy, varieties tend to have bright white stems that can be chopped into soups and stir-fries.
